We are seven good friends from Denmark who’ve embarked on an adventure together. We want to create a truly local whisky – using our own homegrown organic barley. That means we’re starting a new Nordic whisky distillery. We’ll commit 100% to turning to our own local ingredients. The ones that we grow right here, in the east of Jutland in Denmark.
What is the problem? Since the industrial revolution we’ve seen how malting has been centralized in huge malting factories. Barley is bought from all over Europe and malted in enormous portions, completely eliminating the individual character and unique qualities of each field.
We want to change this. We want to create a whisky using grain grown on one and the same field. A field that Lars, the farmer in our group, has cared for so lovingly. What does this field taste like once we’ve malted the grain and mashed, distilled and matured the spirit? We need to find out, and we’d love if you would join us.
